• Sunday: A WARM WELCOME
We start the Slow & Local Taste Week in style: with an aromatic wild herb aperitif, fine regional bites, and a personal introduction to the SLOW & LOCAL TASTE WEEK with the Zelger Mahlknecht family. A relaxed start to days full of flavor, encounters, and stories.
• Monday: FOREST AROMAS & FERMENTATION
Discover the power of nature: during a herb walk with Brigitte, we’ll dive into the world of wild herbs. In the evening, Chef Reinhard provides exciting insights into Slow Food and fermentation – accompanied by a menu rich in depth and vibrant flavors, perfectly complemented by white wines from the highlands of the Eisack Valley.
• Tuesday: WHITE GOLD FROM CARDANO
A behind-the-scenes look at true craftsmanship: at the Amò Mozzarella Workshop, we experience how the finest specialties are created from South Tyrolean buffalo milk. Mozzarella, burrata, stracciatella, and scamorza are made here with artisanal skill and the best local milk. In the evening, at “Büffel & Berg,” creamy burrata meets South Tyrolean buffalo meat and May asparagus from Terlano. The evening is rounded off with an exclusive wine tasting with host Daniel (extra charge: €45).
• Wednesday: BIODYNAMICS & WINE EXCELLENCE
Between vineyards and mountains, in the morning we discover the philosophy of viticulture at the Glögglhof Winery in Cornedo. In the evening, a finely curated menu highlights the flavors of two unique terroirs. Our sommeliers guide you through the evening with characterful wines and fascinating stories from the cellar and the mountains.
• Thursday: HISTORIC STONE OVEN, GRAIN & CRAFT
Tradition you can touch: in the workshop on Schüttelbrot, with the two master bakers, Fabian and Erwin Näckler, you’ll learn the art of “shaking” in the historic stone oven. In the evening, we bake, taste, and enjoy together – with regional specialties, fresh mozzarella produced by Dennis Pellegrini, and craft beer by Jochen Bauder from Nopphof.
• Friday: SLOW & LOCAL TASTE MILE
A festival for all the senses: from the morning coffee experience at the Caroma Roastery in Fiè to the evening Taste Mile at the hotel. Meet our producers in person – from cheese, vegetables, and meat to chocolate and wine. Our Taste Mile leaves nothing to be desired. Meanwhile, our kitchen team serves creative gourmet highlights from the Pfösl kitchen.
• Saturday: A MORNING FULL OF DELIGHT & NATURE
A final moment to pause and savor: during the gourmet nature breakfast, we reflect on the week – full of flavors, encounters, and authentic regional diversity.
