How we use alpine herbs at the Pfösl

Regional variety from our own land

As a hotel with garden, the Green Luxury Hotel Pfösl features three different raised beds with over 50 healing and garden herbs, along with a large permaculture field containing ancient and rare vegetable and grain varieties. These installations are intended as inspiration, pantry, natural pharmacy, and also as a learning and social place.

Depending on usage, our alpine herbs grow in the raised beds "Bread and Salt", "Smoke and Blessing", or "Food and Drink". Hostess Brigitte personally cares for the raised beds with great love and is happy to tell you more about the effects of the healing herbs that are used and processed in our house by the hosts, for cooking with herbs, at the bar, in the spa, and by all who wish to work creatively with them.

Bread & Salt
This raised bed is dedicated to traditional alpine herbs. Under the name "Bread & Salt" grow herbs and spices that have been used for generations in bread baking, giving our old bread varieties their distinctive character. The scents of our homeland unfold between caraway, fennel, anise, and the typical South Tyrolean blue fenugreek. Additionally, you will find the herbs for the homemade Pfösl herb salt: various types of thyme and oregano, alchemilla, goutweed, ground ivy, and many other aromatic plants. The harvest finds its way directly to the kitchen, on your table, and of course to our guest bread baking course, which takes place regularly in the summer around our 300-year-old oven.

Smoke & Blessing

The "Smoke & Blessing" bed unites the herb
s for incense, which have long been valued for their excellent scent and purifying properties. Many of these herbs are dried by us and then burned or processed into fragrant tea blends. Popular herbs for incense include various types of mint, lemon balm, chamomile, elecampane, St. John's wort, marigolds, and various types of sage and rosemary. Their scents accompany us during rituals in the spa and in our movement and relaxation sessions. They connect to ancient herbal knowledge that has been passed down through generations in South Tyrol.

Food & Drink
The third raised bed is a true sea of flowers. Under the name "Food & Drink", plants that delight primarily through their colours, floral splendour, and versatile uses when cooking with herbs can be found. Mallow, marigolds, cornflowers, evening primrose, beebalm, and numerous other flowering plants transform the bed into a vibrant meeting place for buzzing insects. We use the flowers for teas, homemade syrups, herb drinks, desserts, and as edible decoration on our plates.

Our permaculture field
Our hotel with garden also features its own permaculture field – a living garden where seasonal vegetable varieties in mixed cultivation grow side by side with herbs and flowers – a true paradise for bees and other insects!

Permaculture means managing the field in harmony with nature, conserving resources, and in tune with the seasons. Vegetables, alpine herbs and flowers support each other. This creates a vibrant ecosystem that improves the soil's natural fertility and promotes biodiversity. The flowers from this field adorn tables, buffets, and special places in our house, bringing the colours and beauty of nature into the hotel.

Our raised beds and permaculture field are much more to us than just a garden. They are places of learning, inspiration, and appreciation for nature. Here, it becomes visible how closely culinary enjoyment, health, and sustainability are interconnected – and how from a small seed something so valuable can emerge. The beds "belong" to all of us - everyone is welcome to help themselves, harvest, collect, and let new ideas arise. What grows in the garden in the morning often finds its way into bread, tea, cocktails, onto plates, or to a ritual in the spa a few hours later.
