Brigitte’s Elderflower Syrup
The Taste of Early Summer
When the elder trees around the Green Luxury Hotel Pfösl are in full bloom, a very special season begins for us. The delicate fragrance of the white blossoms fills the air, bringing back memories of warm summer days, a close connection to nature, and traditional craftsmanship. From these precious flowers, Brigitte’s Elderflower Syrup is created – a simple recipe that captures the essence of early summer.
Ingredients
•40 elderflower blossoms
•8 lemons
•30 g citric acid
•½ glass fruit vinegar
•3 litres water
•3 kg sugar
Preparation
Carefully shake the freshly picked elderflower blossoms and place them in a large glass or ceramic container. Add the citric acid, fruit vinegar and water.
Peel the lemons and carefully remove the white pith to avoid any bitterness. Add the lemon pulp and the peels to the mixture.
Stir well and leave to infuse in a cool place for two days. During this time, the elderflowers release their delicate aromas and blend beautifully with the freshness of the lemons.
After two days, strain the liquid through a fine sieve or cloth. Add the sugar and slowly bring everything to a boil. Simmer for a few minutes until the sugar has completely dissolved and a fragrant syrup has formed.
Pour the hot syrup into clean bottles and seal immediately.
A Taste of Summer in a Glass
Whether mixed with fresh water, enjoyed as a refreshing aperitif, added to Prosecco, or used in desserts, elderflower syrup brings the scent and flavour of nature straight into your glass.
